Do not let the title put you off, when diagnosed with low potassium caused by a tumour I had to change my diet to add more potassium rich foods, these dishes are delicious in their own rights.  

Moroccan Vegetable Stew

This stew was even better the next day for lunch, making it perfect for meal prep.  The combination of warming spices, sweet potato and chickpeas made it one of those meals that feels like a hug in a bowl.

I have always loved to bake and cook, spending time the the kitchen, however 2026 wasn't my year health wise and I became increasingly ill whilst medical teams tried to find the cause, I was exhausted, my life became one medical appointments after another, finding myself rushed into hospital several times.

Thankfully the diagnosis came and the medication started whilst I wait for the tumour to be removed. 

My energy is slowly coming back and on good days I found the energy to head back to my kitchen for more than just dinner. 

Seitan: The Meat Alternative you can actually make yourself

Seitan: What on earth is that?

Seitan is one of those foods that always needs an explanation, Seitan is a high protein food made from the gluten in wheat which takes on the meaty texture and can be used to replace meat. It can be seasoned, shaped and cooked in so many different ways.  There are two ways to make it, the washed flour method, using all purpose flour , quiet messy, but oddly satisfying washing away all the starch to produce stretchy gluten or with Vital wheat gluten which is quicker and less messy.
