Every Gardener dreams of bumper a harvest, Until you're standing in the kitchen with 7lb of tomatoes staring back at you wondering what on earth you're going to do with them all!
Thankfully there is always a solution and in our house, the really soft ones don't even make it as far as the kitchen, Crush our resident Tortoise who has developed an incredible ability to sense the exact moment I'm about to harvest. He'll be nowhere to be seen, then suddenly appear underneath my feet, waiting for his tomato donation. Apparently freshly picked tomatoes come with a compulsory Crush tax.
What counts as a tomato glut? The moment you start to give them away because you can't possibly eat them all!
Eat the now: Bruschetta, salads
Cook them: Roasted tomato sauce, soup, pasta sauces, curries, passata
Preserve them: Freezing, Chutney and slow roasting
Don't waste them, if they are slightly soft there are so many things that you can do with them rather than throwing them away.
