Lilly`s Couscous Salad

This is such a staple in our family and I've posted this before but it's so good and definitely worth a place on the website. 

It is so colourful, vibrant and packed full of flavour as well as being a really good way to get veggies into the kids and Rob as lets face it he is worse at Veg than the little ones. 

The best part is you really can chuck in whatever you like into the mix, it keeps for about 3 days in fridge, although its usually all eaten by then in our home.

You can use Pearl Couscous (giant Couscous), Bulgur Wheat, Pasta or rice as the base, they all work really well.

 

Recipe

  • 1 pk pearl couscous
  • 200 ml Vegetable stock
  • 1 tin chickpeas
  • Juice of a lemon
  • Season salt and pepper
  • 1 tsp Garlic
  • 1 tsp Onion granules
  • Cherry tomatoes, quartered  
  • Pepper, chopped
  • Olives, halved
  • Cucumber, chopped
  • Sweetcorn
  • Onion, chopped
  • Fresh basil, parsley, chives, Mint, chopped 
  • Feta cheese, cubed
  1. Simmer couscous in vegetable stock until cooked then drain
  2. Add everything else, mix and serve
