Tomato Soup

There is something wonderfully comforting about a big bowl of homemade soup.

Today whilst off work with a sticky cold, all I wanted to eat was tomato soup and chips.  I made a fantastic tomato soup and it reminded me that soup deserves to be on the website.

Soup is one of those meals that doesn't need to be complicated, expensive or perfectly planned.  In fact, some of the best soups start with a fridge full of vegetables that need to be used up, brilliant for reducing waste which I'm sure by now you know I'm a huge fan of. 

But it can also be a result of store cupboard super heroes as in the case of my Tomato soup. 

Soup can be batched, frozen or simply popped in the fridge to be eaten within a week.

This can be made on the hob or if you have a soup machine even better.  It's one of my favourite kitchen gadgets. I hummed and harred about getting one but my only regret is not getting one sooner. It makes perfect soup in 30 minutes, (as well as sauces, smoothies, Milkshakes to name a few). Simply put in the ingredients, choose the soup required, chunky or smooth, it cooks and blends without a single stir or need to watch. 

 

Recipe:

  • 1 Tin of chopped tomatoes
  • 1 Tin Butter beans
  • 1 Carton Passata
  • 4 pickled Onions
  • 280 ml Vegetable Stock
  • 1 tsp Henderson's Relish
  • Seasoning

Method:

  1. If using a soup maker like me then chuck everything in and choose smooth soup. 
  2. Serve

or 

  1. Pop all ingredients into a saucepan, bring to boil and simmer for 20 minutes, stirring occationally. 
  2. Remove from heat and allow to cool slightly
  3. Blend with a stick blender until smooth
  4. Serve
