Best way to start the day, Moroccan Pancakes

There are so many ways to cook pancakes but this is by far my favourite pancake recipe, It does take a little longer than a normal pancake to allow the yeast to activate, however they are definitely worth the wait. 

Serve warm with fresh fruits, nuts, seeds, chocolate chips, drizzle of maple syrup or my favourite Dandelion Honey, absolutely delicious. 

These can be made ahead and when cooled stored in the freezer, pop in the microwave for a few minutes to reheat when needed to save time next time you need them. I often double the mix to make extra for another day. 

Recipe:

  • 1 tsp dried yeast
  • 1 tsp sugar
  • 1 cup of warm water
  • 1 cup of milk such as oat
  • 2 cups of self raising flour
  • 2 tsp baking powder

Method:

  • Mix Warm water, yeast and sugar and leave to bubble for 5 minutes
  • Add milk, flour and baking powder and mix until smooth  
  • Leave in a warm place to rise for about 30 minutes
  • Spoon into a warm oiled pan and allow to cook, allowing bubbles to rise and pop. do not flip as this spoils the bubbles
  • Serve warm with the topping of your choice
