Lillys Battenberg Request

I've been promising to make Battenberg with Lilly for ages but the weather had been too hot so now finally cool but my only day off this week had a birthday party in the middle, so we baked cakes before we left using my Mothership cake mix and allowed the cakes to cool. When returned they ready to decorate

Use my Mothership cake mix and make two cakes, add pink colour to one and yellow to the other.

  • 200g self raising flour
  • 200g caster sugar
  • 150g plant based butter 
  • 1 tsp almond essence

Wet ingredients

  • 200ml plant based milk (or wherever we have to call it now dont get me started)
  • 1tbsp apple cider vinegar
  • 1 tsp bicarb soda

To decorate

  • 1 pack of Marzipan
  • Jam (we used strawberry, Raspberry works well too)
  1. Mix the wet ingredients into dried ingredients, pour into two baking tins and bake at 160oC for 25 mins, Leave to cool
  2. When cool shape cakes into two long strips, roughly the same size and shape otherwise will be a nightmare to stack. 
  3. Roll out marzipan, cover with jam, (I find it easier to put some jam in the microwave for a few seconds to make easier to spread), place one pink and and yellow strip on top, add jam in between slices and on top, then add the other two strips alternating the colour, jam in between.
  4. Gentle roll the marzipan over the stack of cakes to seal
  5. Trim off rough ends and enjoy.
