Cinnamon Apple Muffins

Welcome back to my Kitchen:  This isn't just a recipe blog, it's a journey back to something I love.   

After a difficult year filled with health investigations, hospital appointments, work, family life, moving house and renovating the garden, I realised I'd quietly stopped baking and creating in the kitchen. Meals became about getting through the day then enjoying the process.

One day I had four over ripe bananas I couldn't  bear to waste.  I baked a loaf, filled the house with the smell of cinnamon and remembered how much I'd missed it. 

So this is my promise to myself: one new recipe every week.

Some will be healthy, some comforting, some inspired by my garden and some simply because they make me smile.

so, pop the kettle on and come and join me in my kitchen. 

 

Cinnamon Apple Muffins

Makes 12 Muffins

Ingredients

  • 250g self raising flour
  • 75g Rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • 75g soft brown sugar
  • 2 eating apples, peeled and diced
  • 80ml vegetable or sunflower oil
  • 200ml oat milk
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar

Method:

  1. Preheat oven 180oC fan and line 12 hole muffin tin
  2. Mix together the flour, oats, baking powder, cinnamon, spice and sugar
  3. In another bowl whisk the milk, oil, vinegar, and vanilla
  4. Add the wet ingredients to the dry and gently mix
  5. Fold in the apples, and set aside for a few minutes to bubble and rise
  6. Divide between the muffin cases and sprinkle top with oats, little brown sugar and cinnamon or pumpkin seeds.
  7. Bake for 20-25 minutes until golden and springy.

These are brilliant to freeze.
